Waiting - Natural Fermentation 

 

Fermentation is a metabolic process that consumes sugar in the absence of oxygen. Microorganisms like yeasts, bacteria, enzymes play the role in the process. Fermentation turns matters into something new, maybe more powerful, but less irritating. 

In many cases, "cultured" or "lab" yeasts are used for fermentation since strong yeasts can be easier to manage. On the contrary, "native" or "natural" yeasts can be riskier, slow down, or even stop before a fermentation is finished. Hyoum chose to use their own enzymes of Lotus seeds to get fermented water to use for its all products. 

Fermentation is in the blood of Koreans, seeing their long history of eateries like kimchi, vegetable pickles, and spices like doen-jang (Korean miso made of soybeans) and soy sauce. Koreans ferment citrus fruits like lemon, mandarines, yuzu to replace sugar in cooking. There is also Mak-geol-li (milky, off-white and lightly sparkling rice wine), well-known traditional Korean alcohol beverage. Maybe this is the secret of their modern-time fame for beauty and young look?! 

 

 

The legend of Hyoum started in a lab in Gangwon province, which is famous for its clean, unpolluted nature. Hyoum has its own lab for "natural fermentation". It maintains consistent temperature between 12-15°C (54 - 59°F) throughout the year, and keeps the Lotus seeds water in a Korean traditional porcelains which have micro holes that help breathing of the water without being contaminated. This whole process takes a few months to get fermented water that is clean and unspoiled enough to use for cosmetics.
