Hyoum Waiting - Natural Fermentation    Fermentation is a metabolic process that consumes sugar in the absence of oxygen. Microorganisms like yeasts, bacteria, enzymes play the role in the process. Fermentation turns matters into something new, maybe more powerful, but less irritating.  In many cases, "cultured" or "lab" yeasts are used for fermentation since strong yeasts can be easier to manage.
